Mediterranean-Style Egg Scramble

Breakfast can be simple and still feel like something you actually want to eat. Warm eggs, sautéed vegetables, and fresh herbs come together into a savory, satisfying meal that feels a step above the usual routine.

Eggs can absolutely fit into a heart-healthy diet when paired the right way. Combining a whole egg with extra whites keeps protein high while moderating saturated fat, and adding vegetables and olive oil shifts the meal toward a more Mediterranean pattern that supports overall cardiovascular health.

Mediterranean-Style Egg Scramble

Ingredients
  

  • 1 whole large egg
  • ½ cup liquid egg whites
  • 1 tsp extra virgin olive oil
  • ½ cup baby spinach chopped
  • ¼ cup diced bell pepper
  • ¼ cup diced onion
  • ¼ cup sliced mushrooms
  • Pinch of salt
  • Optional: fresh herbs parsley, basil, or chives
  • 2 slices sprouted whole grain bread

Method
 

  1. Heat olive oil in a nonstick skillet over medium heat.
  2. Begin toasting the bread.
  3. Add onion, bell pepper, and mushrooms, and sauté for 3–4 minutes until softened.
  4. Add spinach and cook for 30–60 seconds until wilted.
  5. In a small bowl, whisk together the whole egg and egg whites.
  6. Pour the eggs into the pan with the vegetables and gently scramble over medium-low heat until just set, about 2–3 minutes.
  7. Remove from heat and top with fresh herbs and black pepper, if desired.
  8. Serve with the toasted bread.
