Avocado Toast with Smoked Salmon

Ingredients
  

  • 2 slices sprouted whole grain bread
  • ½ medium avocado mashed
  • 2 oz smoked salmon
  • 1 tsp extra virgin olive oil optional, for drizzling
  • Fresh lemon juice to taste
  • Freshly ground black pepper
  • Optional toppings: sliced cucumber cherry tomatoes, capers, fresh dill or chives

Method
 

  1. Toast the bread to desired crispness.
  2. Mash the avocado in a small bowl with a squeeze of lemon juice and black pepper.
  3. Spread the avocado evenly over the toasted bread.
  4. Layer smoked salmon on top.
  5. Drizzle lightly with olive oil if desired and add optional toppings such as cucumber, tomatoes, or fresh herbs.
  6. Serve immediately.
