Creamy Lemon-Pistachio Chicken Pasta

Sometimes you want a comforting, creamy pasta dish, but not one that leaves you feeling weighed down. This version delivers that same rich, satisfying texture in a lighter, more balanced way.

Instead of heavy cream, the sauce gets its creaminess from cannellini beans, Greek yogurt, and pistachios, keeping saturated fat lower while still feeling indulgent. Paired with whole wheat pasta and lean chicken, it is a comforting meal that fits more easily into a heart-healthy approach without sacrificing flavor or texture.

Creamy Lemon-Pistachio Chicken Pasta

Ingredients
  

For pasta and chicken
  • 16 oz box of whole wheat penne pasta
  • 1 lb boneless skinless chicken breast cut into bite-size pieces
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • Freshly ground black pepper
For Lemon-Pistachio Sauce
  • 1 15 oz can cannellini beans, drained and rinsed
  • 2 cloves garlic whole
  • ¼ cup shelled pistachios unsalted
  • ½ cup plain nonfat Greek yogurt
  • 1 cup reserved pasta cooking water
  • Zest and juice of 1 lemon
  • Freshly ground black pepper
  • ½ tsp of Himalayan pink salt

Method
 

  1. Bring a large pot of water to a boil. Cook the whole wheat penne according to package directions until al dente. Reserve 1 cup of the pasta cooking water, then drain.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add chicken pieces and season with black pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is cooked through and lightly golden. Add minced garlic and cook for 30 seconds until fragrant.
  3. In a blender or food processor, combine cannellini beans, pistachios, Greek yogurt, garlic, lemon zest and juice, salt, black pepper, and half the reserved pasta water. Blend until very smooth and creamy. Add more pasta water as needed to reach a pourable, sauce-like consistency.
  4. Add drained pasta to the skillet with the chicken. Pour in the creamy lemon–pistachio sauce and toss gently over low heat for 1–2 minutes until everything is evenly coated and warmed through.
  5. Taste and adjust seasoning with extra pepper or lemon juice if desired. Serve warm.
